This is not one of your run-of-the-mill places to drink in Sydney. The city's resident bar baron Justin Hemmes has spent around $150-million on this galactic-sized playpen, which has numerous bars, cocktail lounges, a Sailor's Thai restaurant and hundreds of staff, including three full-time gardeners and a full-time florist. The interior is like stepping into the sort of bar a stylish Willy Wonka may have conjured up, with astro turf, white marble, ferns growing wildly and a huge Japanese maple that spans between two levels. The main bar and Lawn Bar are for the wild and care-free, but more discerning drinkers should make a beeline to The Den and The Lounge. With their Chesterfield sofas, velvet drapes, both are styled in an elegant Art Deco fashion and cater to cocktail aficionados with top-shelf tipples, cigars and mannerly staff. With so many venues to manage and so many eager party-goers to please, Ivy's Doormen are notoriously tough with their velvet ropes, and while it's true the poseur ratio can be remarkably high at times, an evening spent here is good, clean, riotous fun.
